There are also many fans of our numerous fine items which combine Japanese technology and Hawaiian style.Tatsuhiro Kaneshiro is the chief baker of the famous "Halepuna Waikiki by Halekulani" hotel in Hawaii, USA. Graduated from a Japanese college of confectionery and cooking, he is now an experienced specialist working at the bakery of Imperial Hotel Tokyo (Chiyoda-ku, Tokyo). Mr. Kaneshiro told us about his life so far, and left a message to the young Hawaiians who consider studying in Japan.―Please tell us aboout your current job.am currently making bread and creating new products for the bakery shop and the restaurant of the “Halepuna Waikiki by Halekulani” Hotel in Hawaii, USA. We focus on using ingredients which are unique to Hawaii, such as pineapple, passion fruit (Hawaiian: liliko'i) and Kona coffee, ordered from every area of the state that produses them.t our shop we have 26 variaties of pastry, with “Danish” ones as our main products. On top of that, I also teach our local staff the techniques cultivated in Japan. reating a concept of a new item it is important to remember the fact that this is a hotel in Hawaii. Although there are many tourists from Japan, of course we also have many guests from other countries as well. Their preferences in the food taste or its amount differ depending on where they are from, but we strive to hear “It's delicious!” from each one of them. ―Why did you decide to work at a Hawaiian hotel?hat is why I came up with the idea of making pastry with the ingredients that represent Hawaii the best. However, as I am a Japanese chef, I am trying to add a touch of Japan to the products I make. I am combining both Hawaiian and Japanese spirit in the pastry I make, so that as many people as possible would be able to enjoy it.fter graduating from a confectionery and cooking college in Tokyo, I worked for 13 years at Imperial Hotel Tokyo. The Imperial Hotel and Halepuna Waikiki by Halekulani teamed up to open a new bakery shop and I recieved the offer to “make the most delicious bakery in Hawaii by making use of Japan's high technology.” I thought that this opportunity to make bread in the environment with the ingredients and staff unavailable in Japan, would be a good experience, so I was happy to get the offer and be able to come to Hawaii.―What is the difference between working in Hawaii and in Japan?nlike Japan with its abundant four seasons, Hawaii has a warm climate all year round so it is easy to use tropical fruits plentifully. Another great feature is that there are many delicious foods you can eat when it's hot. Japanese and American have a different sense on the amount of food that is enough to be satisfied. At first, I had a hard time because I didn't understand the tastes of the people here, but I got to understand them better by studying the ingredients and the taste of local meals. If I didn't work here, I don't think I would be able to understand the taste diversity of Hawaiian food.hile working in Japan, I noticed that the foreign visitors coming to Japan are looking forward to “Japanese food,” so I tried to keep that expression of Japaneseness in my work. As a head baker he raised popularity of the bakery's bread that is full of originality and that is combining advanced technology and Hawaiian spirit.in food business. So when I was a high school student, I participated in a lot of open-school events of vocational schools. After participating lots of kinds of vocational schools' event, I found bread making is the most interesting thing for me. But I think there is a real experience that you can never get till you study in Japan. This experience is more precious than the information from the Internet. f you have any interest in studying in Japan even a little, I strongly recommend to challenge to study in Japan. There are a lot of foods only available in Japan. Also there a lot of new experience I got while I touched culture, food and people in the USA. ou need to go to the place to deeply understand the local culture and custom: like as there is never chance to get the original recipe of local foods until when you are at the local place.
